Dateline 4-18-2017

I'm kind of excited today for two reasons. One, I recently bought an Instant Pot and have spent the last two days experimenting with it by cooking Dollar Tree food and today I am going to move on and attempt to make my first full blown Instant Pot meal.

It's been pretty fun exploring my culinary options. For the past couple years I've been living in a finished garage with a small fridge and a hot plate. Sure this was enough to get by but it limited my eating option to items that don't matter how well or evenly they've been cooked. Between these cooking limitations and the fact that I'm broke, this has left me with very limited dietary options. 

I bought this Instant Pot thing because I wanted to start making batches of beans and rice so I can take one day and cook all my meals for the week that I can just grab and reheat when I'm hungry. Not only do I feel like this is a healthy option for lunch, I can have it every day for a year and it would probably cost me about a hundred bucks, freeing up the rest of my food budget for spices and higher quality add-ons to add flavor.

Today, I'm going to make my very first attempt at slow cooking a pork loin. This was five pounds of meat for about ten bucks and if it works out, I can buy one or something equivalent once a week to add to my beans and rice, making my lunch about two dollars a day.

This will be my first attempt a slow cooking and I'm excited by the set it and forget it aspect and the fact that for the rest of the day my room will smell like yummy pork. I'll be sure to photo document my progress as I go and will share it in my post tomorrow.

The second thing that I'm excited about is the fact that today is the first day, since starting my Saturday Night Live challenge, that I'll be watching an episode without the original cast. Sure it was great to rewatch the first five season but the original cast was filled with my comedic heroes so I felt like a douche whenever I got critical but from here on out, I feel my internal governor will allow me to open up.

That's not to say that I wasn't honest about how I felt about any of the earlier episodes, I just took to an apologetic tone whenever I felt something was wrong. That's also not to say that I'm just excited about being critical, I'm also excited about these upcoming seasons because we are now getting to the time period when they originally aired that I might remember watching some of them live. As the youngest of my batch of cousins, my taste in television was advanced at an early age as I struggled to keep up with the old kids.

Oh, the Instant Pot timer just went off, time to chow down my first attempt at pressure cooked steak and eggs before I move on to my next task. I'll let you know tomorrow how everything turns out.
